Is there any soup or stew that screams "WINTER" more than beef stew? Paired with a nice homemade bread, this can be a completely filling a hearty meal. I am always looking for slow cooker beef stew recipes that are simple and that my family will love and this one fits the bill quite nicely (and there are just so many crockpot pulled pork recipes that I can make before I need something different!)

If my family wouldn't kill me for it, I would have added about a half of a bag of frozen peas in the last 30 minutes of cooking to give it some more color and bulk. Alas, even the slightest hint of peas in my house immediately puts the recipe on my kids "not going to try it" list. If your family will eat peas, I suggest you give it a try!

To make it, you will need:

2 pounds Beef Roast, cubed
½ cup Flour
2 teaspoon Salt
½ teaspoon Black Pepper
½ teaspoon Thyme
1 teaspoon minced Garlic
1 Bay Leaves
1 teaspoon Paprika
1 tablespoon Worcestershire sauce
1 large Onion, chopped
2 cups Beef Broth
1 lb Potatoes cubed
1 lb Baby Carrots
2 stalks Celery, chopped
2 tablespoon Brown Gravy mix
2 cup Water

Prepare the meat in the bottom of your slow cooker (see detailed directions below) and then dump the rest of the ingredients in the slow cooker. In as little as 4 to 6 hours it will turn from this:

Ingredients

  • 2 pounds Beef Roast cubed
  • ½ cup Flour
  • 2 teaspoon Salt
  • ½ teaspoon Black Pepper
  • ½ teaspoon Thyme
  • 1 teaspoon minced Garlic
  • 1 Bay Leaves
  • 1 teaspoon Paprika
  • 1 tablespoon Worcestershire sauce
  • 1 large Onion chopped
  • 2 cups Beef Broth
  • 1 lb Potatoes cubed
  • 1 lb Baby Carrots
  • 2 stalks Celery chopped
  • 2 tablespoon Brown Gravy mix
  • 2 cups Water

Instructions

  • Place meat in slow cooker.

  • In a small bowl, combine flour, salt and pepper.

  • Sprinkle flour mixture over the meat and toss to coat.

  • Stir in remaining ingredients.

  • Cover and cook on high for 4 - 6 hours or low for 10 - 12 hours.

  • Remove bay leaf

  • Serve and enjoy!
